Set of 3 yellow enameled cast iron casseroles of different sizes: 1 - Doufeu model signed ac (André Cousances). Model created in the 30s, this example was probably manufactured in the 50s / 60s. Designed for low heat cooking, it is a high-end model. This casserole was created in 1934 by the Hauts-Fourneaux foundry in Cousances-les-Forges, before being bought by its competitor Le Creuset in 1957. The Doufeu casserole stands out from the others thanks to 2 unique innovations: The exterior of the lid is curved and designed to receive cold water or ice cubes in order to optimize internal condensation. The interior of the lid is spiked, which allows food to be basted by condensation during cooking.
