Educational panel "alcohol is the enemy" dating from around 1900. In its juice, several gaps and defects see photos. Period panel (no reproduction) As if to interpret similar guidelines, the school panel designed by dr. Galtier-boissière gives us an account, in two vertical series of three engravings, of an experiment carried out with two guinea pigs: one was quite happy to receive only an injection of this grape wine that the context includes among the "natural drinks", such as cider, perry, beer; the other subject was very unfortunate to receive an injection of a so-called "industrial" drink and represented by a bottle of aperitif, absinthe, cognac, marc, rum or kirsch. While the first animal survived his drunkenness, the other was convulsed and then succumbed. Hence this pseudo-justification of the titles: natural drinks are "good taken moderately" and industrial drinks "bad even taken in small quantities". We continue to believe, like dr. Galtier-boissière, that fermented beverages are hygienic and that we can encourage their consumption at the rate of one liter per day. Wine is still considered a medicine and a replenisher. Advertising blotters, distributed in schools, always indicate that a liter of wine at 12 degrees is equivalent to 850 grams of milk, 370 grams of bread, 585 grams of meat or five eggs.
